
Recipe for Jain & Iyer Khamman Dhokla Mix
Ingredients:
1 packet Jain & Iyer Khammam Dhokla Mix (includes sachet)
170 ml water (for the batter)
25 ml water (to dissolve sachet contents)
40 ml water (for sprinkling after steaming)
30 ml oil (for tempering)
1 tsp mustard seeds
2–3 green chillies (slit)
25 ml water (for tempering)
Fresh coriander leaves (for garnish)
Grated coconut (optional, for garnish)
Method:
In a bowl, mix the contents of the pack (except the sachet) with 170 ml water. Set aside for 5 minutes.
Dissolve the sachet in 25 ml water and add it to the batter. Stir gently and quickly. (Do not overmix.)
Pour the batter into a greased khammam pan and steam for 20 minutes.
Let it cool for 10 minutes, then sprinkle 40 ml water evenly on top.
For tempering, heat 30 ml oil, add mustard seeds and green chillies, then pour in 25 ml water.
Pour this tempering over the dhokla.
Garnish with coriander leaves and grated coconut.
